Butterscotch Banana Bread






This bread is a special treat in our house....it is SO yummy! I got the recipe from Dave's mother...she used to make it for him when he brought home his report card. For every A he got a loaf of banana bread. It was/is his favorite and that is what he requested for good grades!

1 3/4 cup flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
1 cup mashed bananas (very ripe bananas work best)
3/4 cup sugar
2 eggs
1/4 cup melted butter
1/4 cup milk
1 cup chopped pecans or walnuts (optional)
1 (6 oz) pkg. butterscotch morsels

Stir together first 6 ingredients and set aside.
Combine mashed bananas, sugar, eggs, and butter...mix well.
Alternately mix flour mixture and milk to banana mixture.
Stir in nuts and morsels.
Pour in greased loaf pan.
Bake @ 350 degrees for about an hour.
Cool for 30 minutes before removing from pan.

**This is an easy recipe. The hardest part is getting it oot of the pan as the morsels may stick. I have started cutting wax paper and lining the bottom of the pan which keeps it from sticking. I also find if I use a little more than 1 cup banana the better it tastes!

I remember when Dave made this for team dinner nights a few times--mmmmm. Thanks for sharing the recipe! I have some over-ripe bananas that may have a new destination.

I REALLY want to try this soon. I love making banana bread, and there are some ripe bananas in my freezer as we speak...
